FAVORITE SCOOP

Cupcakes are all the rage right now, aren't they?! I don't know about you, but I find it annoying to try to fill the muffin papers with a spoon. You never know how much batter to put on the spoon and once you get all the papers filled, you go back through adding to each one, to make them all the same size. At least that's what I used to do! I'm a bit anal that way! haha When I started cooking for Summer Camp I discovered the joy of using measured scoops!! It was exactly what a CDO (that's OCD, except the letters are in order like they should be!) person like me needed!

This No. 20 scoop - 1 5/8 oz (if you scoop your cupcake batter out in even scoops) makes exactly 24 cupcakes, all perfectly the same size! There! Now isn't that better?! :-)

YOUR SIGNATURE DISH

I love reading about people's "signature" dishes. What is your signature dish? By that, I mean, the dish that you are known for - it has your name written all over it. Not LITERALLY, mind you! It's the dish people expect you to bring to a dinner, and if you don't, they ask you where it is. When you do take it to fellowships, you get asked for the recipe. And if you get asked for the recipe, you can sit right down where you are and write it out for them. You've made it so many times you know the recipe by heart. If you look at the recipe, you can read it as fast backwards and upside down, as you can forwards and right side up! You could make it with both eyes closed and one arm tied behind your back. haha Get the picture? So WHAT is it?

What's your favorite meal for company?

What is your favorite meal to fix when you are having company over?
For me, it depends on what day it is. If it's a Sunday, then it's usually a roast chicken or pot roast. If it's a weeknight, it might be steaks on the grill. I'd like to hear what others fix for company though, so let me hear your favorites.

*NOTE* Back from Summer camp and taking a bit of a weekend break from posting recipes. I'll be back to posting new ones on Monday though!

What's your favorite?

What's your favorite type of skillet to cook in? Is it heavy duty aluminum, nonstick, cast iron, porcelain coated cast iron? I don't even know what all the types of skillets are, out there.

I would have to say mine is my trusty iron skillet. My Honey bought me 2 or 3 on ebay several years ago. I use them all the time, especially the large one. You just can't go wrong with it. It cooks nice and even and makes the BEST batch of fried chicken you'll ever sink your chompers into! Works tremendous for making a mess of fajitas too! It served me well the other night too, when our power went out and I had to cook dinner on the gas grill outside. I put my potatoes and onions in it and set it directly on the grill grate. Worked like a charm. The thing is virtually indestructible!

What's your favorite?

What is your favorite kitchen utensil? The thing you absolutely cannot do without.

Leave me a note and let me know, I'd be interested to read what you all have to say.

For me, it is a whisk that my mother in law gave me at my wedding shower (27 years ago) and yes, I still have it. I've never seen another one like it, since. I love it, it makes THEE best gravy! I like it because it gets to the edge of the pan, unlike a regular egg whisk. Works great for pudding and other fillings too.
