BRAZILIAN RICE

This rice recipe is DEElicious! Someone commented on one of the Brazilian recipes that I posted the other day, and left this recipe. It sounded good, so I decided to try it tonight. I made a rotisserie chicken in our rotisserie oven (YUM!) and made this rice to go along with it. A definite keeper. Will be making this one again and again. The only thing I'll change about it will be, the next time, I'll use chicken broth, rather than water for the liquid.

BRAZILIAN RICE

Vegetable (or canola) oil - enough to cover the bottom of a sauce pan
2 cloves garlic, peeled and minced
1 small onion, chopped
Salt
2 cups rice

Heat oil over medium heat. Cook onion and garlic in hot oil, season with salt, cook until the garlic starts to turn slightly brown. Add rice and stir well. Cover rice with very HOT water, about 1/2 inch above the rice (I used chicken broth and it gave it a ton more flavor). Bring to a hard boil. Cover and turn off heat. DO NOT take cover off from rice. Rice should steam for about 20 - 30 minutes. Fluff with a fork and serve with your favorite entree.

Yep,had this last night at someone's house for dinner after we had our Bible study! LOL I mean, come on, how else would you eat rice?? Dump a little feijão on top with some aipim on the side and you are good to go!! Mmmm, mmmm good! Love ya!

We'll never make rice any other way now. This is it for us. Well not the feijao part, but you know...

I made this last night for dinner complete with the feijao! :) It was way delicious! SO easy to do and WAY better than plain rice!!!

This is so good, and easy. Only, I just made my rice the regular way after sauteeing the garlic & onion.(measuring the water - only I subbed chix broth for water then simmering it) I tried using a different method to cook rice a couple of weeks ago - and it didn't cook all the way... so our rice was crunchy, and I was in the doghouse the rest of the night! LOL, so I decided not to brave it out this time!

I'm so glad you posted that review Tracie, because it reminded me that I hadn't changed that in the recipe yet - but I also used chicken broth in place of the water. I wouldn't do it any other way. It's funny, but I actually got this recipe from a young lady whose father is a missionary to Haiti.
